Vassaltis Vineyards Plethora

Vassaltis Vineyards Plethora is a unicorn wine. Inspired by the winemaking techniques of our ancestors they harvest overripe bunches of Assyrtiko and ferment them in stainless steel tanks. The overripe character gives a highly alcohol level while allowing for some residual sugar. We then allow the wine to mature in barrels that are not topped up allowing thus for a gentle oxidization to take place. After twelve months in the barrels, the wine is bottled and cellared for two years before its release.

Golden color. Toast and vanilla, mandarin, blood orange, wet stone, nuts, white pepper, very complex. Salt, ripe citrus fruits, toast, structured and concentrated , full bodied, very long after-taste.

Ageing potential: 10 years

Serving suggestions: White meat , hams, aged cheeses, at 12° C
